Superfood-Packed Truffles

Today I witnessed something beautiful.  A group of incredible women all came together to comfort a friend who just lost her mother.  In the wake of her sadness, a collective gift was formed.  We placed an empty box on the table and each one of us filled it with homemade healthy foods.  We decided that instead of having to focus on nourishing her body right now, that she needs to concentrate her time on nourishing her soul.

When I’m sad, I gravitate towards comfort foods and chocolate is definitely one of them.  So, last night I grabbed every superfood I could find in my cupboard and combined them all into a delicious chocolate truffle to contribute to this box.  That way, she can indulge in a sweet treat, but still obtain all of the benefits of the nutrients packed inside.

I usually try to create recipes that don’t require a ton of different or uncommon ingredients.  But this time, I thought I would introduce you to some fun superfoods that are always in my cabinet by sharing this healing recipe with you.

DSCN5410Chlorella

Similar to Spirulina, it’s a nutrient-dense blue-green algae high in chlorophyll, which is the blood of the plant.  It’s rich in phytonutrients including amino acids, biotin, B vitamins, iron, zinc, beta-carotene and magnesium.  Amongst it’s many benefits, Chlorella can help to remove heavy metals from the body, boost the immune system and aid in maintaining heart health.  Always make sure to look for broken cell wall as the wall is undigestible to humans.

Camu Camu

These little gems are known to be the most nutrient-dense and concentrated botanical source of Vitamin C in the world – as much as 60 times more than an orange!  Camu is a cherry-like fruit that grows wild in damp, tropical climates.  Natural sources of Vitamin C contain naturally occurring co-factors which help with the absorption and assimilation within the body.

Hemp Hearts

High in a diversity of nutritional content, they are a complete protein.  Hemp hearts contain the essential fatty acids omega 3 and omega 6, making them a great source of the good fats.  They are also rich in both soluble and insoluble fibre.  The vitamins and minerals contained within these superfood seeds are Vitamin E, A, B1, B2 and even D!

Chia Seeds

Rich in fibre, these little water soluble seeds absorb up to 9 times their own weight in water.  What does this mean?  Well, they will expand in your digestive tract, keeping you hydrated, removing toxins from your digestive system and helping to regulate your bowel movements.  YUM!  They also contain high amounts of omega 3 fatty acids, which are known to be anti-inflammatory.

Raw Cacao

It’s no secret that I love chocolate… but not that refined crapola.  The standard cocoa powder you might find on the shelf at the grocery store has been roasted and chemically processed. Well, raw cacao comes stuff comes right from the tree!  It’s full of nutrients like magnesium, zinc, iron and fibre – to name a few.  It also contains flavonols which are active antioxidants that are great for cardiovascular health.  Oh cacao… it’s literally a way to your heart!

DSCN5412As I was making each one of these truffles, I directed my thoughts towards our friend.  I put my energy and intentions into every single one.  And that’s the beauty of creating something.  You can add in whatever you’d like.  Well, my secret ingredient is always love.

Superfood-Packed TrufflesDSCN5403Ingredients

4 x soaked medjool dates, pitted

2 tbsp tahini

3 tbsp maple syrup

1 tsp vanilla

1 tsp chlorella powder

1 tsp camu camu powder

2 tbsp shredded coconut

1 tbsp hemp hearts

1 tbsp chia seeds

1 tbsp ground flax

Pinch cinnamon

1 cup raw cacao

handful Camino dark chocolate chips

Method

In a food processor, blend dates, tahini, maple syrup and vanilla into a paste. Add chlorella, camu camu, coconut, hemp hearts, chia seeds, flax and cinnamon and mix. Add cacao gradually until thick. Empty mixture into a bowl and stir in chocolate chips.

On a plate or flat surface, sprinkle a bit of extra cacao powder. Roll mixture into balls and then roll into the cacao to coat.

Makes 12 small truffles. Stores in fridge for up to 2 weeks.
