Looking for a dose of healthy fats? This decadent, raw, gluten-free, refined-sugar free dessert will leave you thinking “What? This can’t be healthy!”
Ingredients
Crust:
1 cup raw walnuts
2 cup raw pecans
1/2 cup fresh dates, pitted
2 tbsp extra virgin coconut oil
1 tsp lemon zest
1/2 tsp vanilla
pinch cinnamon
Filling
2 ripe avocados
4-5 tbsp raw honey or maple syrup
1/2 tsp vanilla
3/4 cup raw cacao powder
1/4 cup milk of choice
Method
In a food processor, blend walnuts and pecans until ground. Add dates, coconut oil, lemon zest, vanilla and cinnamon. Blend until mixed into a sticky dough texture (but can still be a bit chunky, if desired). Remove from food processor and press firmly into the base of pie or tart pan. Form a crust by spreading evenly across the bottom. Set aside in fridge until filling is ready.
Half avocados and scoop flesh into food processor. Add maple syrup/honey, vanilla and cacao powder, blend until smooth. Remove crust from fridge and top with filling mixture.
Flatten with spatula. Top with raspberries and return to fridge until set, about 20 minutes. Enjoy!
