Great as a side dish or even as a solo main. Try experimenting a little by letting cabbage be your friend.
This recipe is raw, GF and fresshhh!
1 1/2 cups heaping cups shredded cabbage
2 beets, shredded
1 small apple, julienned
2 small carrots, shredded
1/2 red onion, minced
1/4 cup unsulfered goji berries
1 cup parsley or cilantro, chopped
2 tbsp fresh dill, chopped
4-5 tbsp extra virgin olive oil
3-4 tbsp apple cider vinegar
2 tsp local raw honey
1/2 tsp cumin
1/2 lemon, squeezed
Sea salt & fresh black pepper, to taste
Toss the cabbage, beets, apple, carrots, onion, parsley/cilantro, goji berries and dill into a large bowl. Stir to mix. In a small bowl or mason jar, add all ingredients of the dressing together and mix (or shake!) Drizzle it over the veggies and toss to coat. Add sea salt and pepper to taste. Adjust seasoning, if required.
Serve immediately – although it does taste pretty yummy the next day! Serves 6 healthy lovely people.
